Ingredients
For the Broth

1 whole chicken (4–5 lb)

16 cups cold water (enough to fully cover the chicken)

4 carrots, peeled and cut into large chunks

4 celery stalks, cut into chunks

1–2 yellow onions, peeled and quartered

1 bunch fresh dill

1 bunch fresh parsley
-
2 bay leaves
-
4 garlic cloves

½ tbsp black peppercorns

1 tbsp kosher salt
For Finishing

2 cups carrots, sliced or diced

Egg noodles of choice
-
Fresh parsley & dill, chopped

Salt and pepper, to taste

Lemon, optional
How to Make Nourishing Chicken Soup
1. Build the Broth
Place the whole chicken in a large 10–12 quart stockpot. Add cold water to cover. Add the carrots, celery, onions, dill, parsley, bay leaves, garlic, salt, and peppercorns.
2. Simmer Gently
Bring to a boil, then reduce to a gentle simmer. Partially cover and cook for 1 hour.
3. Shred the Chicken
Carefully remove the chicken and place on a plate. Once cool enough to handle, shred the meat and set aside.
4. Return the Good Stuff
Add the carcass (bones and skin) back into the pot. This is where the deep nourishment happens.
5. Long Simmer
Simmer uncovered or partially covered for 3 more hours to extract flavor, minerals, and collagen.
6. Strain
Remove the carcass and strain the broth, discarding the solids. Return the clear broth to the pot.
7. Finish the Soup
Add the shredded chicken and fresh carrots. Simmer for 10–15 minutes, until carrots are tender. Season with salt and pepper.
8. Cook Noodles Separately
In a separate pot of salted water, cook egg noodles according to package directions.
9. Serve
Ladle hot soup over noodles. Garnish with fresh herbs and a squeeze of lemon if desired. Serve warm with crusty bread.
