It’s light yet rich, sweet but not too sweet, and packed with just the right amount of coconut to make you feel fancy-and get this, it's Gluten-Free! After all, we’ve been eating our veggies (right?!), so it’s clearly time for something sweet again. This cake is like a cheesecake and a coconut macaroon had a beautiful baby. And the best part? No fussy layers, no frosting drama—just pure, simple goodness baked into every bite.

What You’ll Need:
- 16 oz whole milk ricotta, drained
- 1/2 cup sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1/3 cup arrowroot starch (or corn starch)
- 1 teaspoon baking powder
- 1 cup unsweetened shredded coconut
- Powdered sugar or more shredded coconut to sprinkle on top
How to Make It:
- Preheat the oven to 350°F.
- In a large bowl, mix the ricotta and sugar until smooth.
- Add the eggs, one at a time, mixing after each addition.
- Stir in vanilla, arrowroot starch, and baking powder until well combined.
- Fold in the shredded coconut (aka the magic ingredient).
- Pour the batter into an 8- or 9-inch springform pan lined with parchment paper and greased on the sides.
- Bake for about 35-40 minutes, or until the edges are golden and the center is just set.
- Let it cool, then remove from the pan and sprinkle with shredded coconut and/or powdered sugar.
- Slice, serve, and pretend you’re on a beach somewhere.
