Rustic Peach Galette: Sweet, Simple, and Perfect for Sharing
Some desserts are meant to be fancy. This isn’t one of them. A Peach Galette is rustic, unfussy, and absolutely beautiful in its simplicity. Fresh, juicy peaches layered on a flaky crust, brushed with butter and sugar, and baked until golden. It’s the kind of dessert that feels special without trying too hard—sweet, summery, and best enjoyed with friends.
Serve it warm right out of the oven, or with a scoop of creamy vanilla ice cream. Either way, this galette proves that good food doesn’t need to be complicated to be memorable.
Here’s What You’ll Need:
Filling

3 ripe peaches, thinly sliced (no need to peel)

⅓ cup brown sugar

2 tbsp melted butter

½ tsp vanilla bean paste or extract

2 tsp fresh lemon juice

2 tbsp arrowroot starch

Pinch of cinnamon

Pinch of sea salt
Crust

1¼ cups all-purpose flour

1 tbsp granulated sugar

½ tsp kosher salt

½ cup (1 stick) cold unsalted butter, cubed

3–4 tbsp ice water
(Or keep it super simple and use store-bought puff pastry!)
Finish

1 egg + 1 tsp water (for egg wash)

Coarse sugar for sprinkling
How to Make It
1. Make the Dough (if going homemade):

In a bowl, whisk together flour, sugar, and salt.

Cut in butter with a pastry blender or your fingers until you see coarse crumbs.

Drizzle in ice water, 1 tbsp at a time, until dough just holds together.

Shape into a disk, wrap in plastic, and chill for at least 30 minutes (or up to 2 days).
2. Make the Filling:

Whisk together melted butter, brown sugar, vanilla, lemon juice, arrowroot starch, cinnamon, and salt.

Add peach slices and toss gently to coat.

Let sit 10–15 minutes so the juices release.
3. Assemble the Galette:

Preheat oven to 400°F.

Roll dough into a 12-inch circle on floured parchment paper.

Transfer parchment + dough to a baking sheet.

Arrange peaches in the center, leaving a 2-inch border.

Fold the edges over the fruit, pleating as you go (the rustic look is part of the charm).

Brush crust with egg wash and sprinkle with coarse sugar.
4. Bake:

Bake at 400°F for about 30 minutes, until crust is golden and filling is bubbling. (Don’t worry if some juices escape—it all sets as it cools.)
5. Cool & Serve:
