We’re talking zesty lime, dreamy condensed coconut milk, a buttery (but sugar-conscious!) crust, and that perfect whipped cream finish.

What You’ll Need:

Crust:

  • 1½ cups graham cracker crumbs (use a no-added-sugar brand like Nabisco Original, or get wild and sub crushed grain-free cookies)

  • 6 tbsp unsalted butter, melted

  • 2 tbsp coconut sugar or maple syrup (optional – for a touch of sweetness and structure)

Filling:

  • 2 (14-ounce) cans unsweetened condensed coconut milk

  • 4 oz cream cheese, softened

  • ¾ cup fresh key lime juice (yes, fresh. It's worth it.)

  • Zest of 2 limes

  • 1 large egg yolk

  • 1 tsp vanilla extract

Topping:

  • Fresh whipped cream

  • Extra lime zest or lime slices for garnish


How to Make Them:

1. Prep Like a Pro:

Line an 8x8" baking dish with parchment paper (for easy lift-out magic). Preheat your oven to 350°F.

2. Crust Party:

Mix the graham cracker crumbs, melted butter, and coconut sugar or maple syrup (if you’re using it) in a bowl until it looks like damp beach sand. Press it evenly and firmly into your pan. Bake for 8–10 minutes, until it’s golden and smells like victory.
Let it cool slightly. Reduce oven temp to 325°F.

3. Filling Time:

Whisk together the softened cream cheese and egg yolk until smooth. Stir in the condensed coconut milk, lime juice, zest, and vanilla. (Taste it. You’ll smile.)
Pour the mixture over the crust and gently smooth it out.

4. Bake It Till You Jiggle:

Let the bars cool completely, then refrigerate for at least 3 hours. Overnight is best—if you can wait that long.
