2 cups shredded rotisserie chicken

2 Persian cucumbers, thinly sliced

1 cup cooked white rice, cooled

Chili Lime Dressing

3 tbsp fresh lime juice

2 tbsp tamari or soy sauce

1 tbsp honey or coconut sugar

1 tbsp toasted sesame oil

1 clove garlic, finely grated

2 tsp fresh ginger, finely grated
The Method
1. Make the Crispy Rice
Preheat oven to 375°F.
Toss cooled rice with avocado oil, tamari, and chili crisp. Spread onto a lined baking sheet and bake for 25–30 minutes, tossing halfway through, until golden and crispy.
Let cool slightly.
2. Make the Dressing
Whisk together lime juice, tamari, honey or coconut sugar, sesame oil, chili crisp, garlic, and ginger.
