BLUEBERRY MUFFIN COOKIES

These blueberry muffin cookies are SO good I couldn’t stop eating them. Loaded with fresh blueberries and a light streusel topping, this recipe is one of my favorites!!!

Cream your butter and sugar. Add your egg and vanilla extract. Add your dry ingredients and milk. Gently fold in your fresh blueberries. The blueberry jam adds a touch of sweetness to this soft, fluffy cookie. Scoop even portions for baking. Add your streusel topping. And voila! You have the BEST blueberry muffin cookies you have ever tasted.

INGREDIENTS

For The Cookies

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 Tablespoon milk
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cup blueberries
  • 4 Tablespoons blueberry jam

For the Streusel Topping

  • 3 tablespoon butter, room temperature
  • 2 tablespoon brown sugar
  • 2 tablespoon granulated sugar
  • 1/3 cup flour
  • pinch salt

DIRECTIONS

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper. Set aside.
  2. Cream butter and granulated sugar together until light and airy, about 2 minutes. Use a rubber spatula to scrape down the sides of the bowl.
  3. Add the egg and vanilla extract. Beat until smooth and fluffy.
  4. Add flour, baking powder, baking soda and salt. Mix on low speed, gradually increasing to high. Mix until combined. Add the milk. Do not over mix.
  5. Gently fold in the blueberries.
  6. Drop the jam into your dough and fold the dough a few times to distribute the jam.
  7. In a separate bowl, combine all the ingredients for the streusel topping. Use a fork to mix until crumbly and clumping together.
  8. Use a cookie scoop to scoop the dough onto your prepared baking sheet. Top with a heaping spoonful of the streusel topping. Press the topping into the dough.
  9. Bake your cookies for 14 to 18 minutes or until the edges are set, but the centers are still a little doughy.
  10. Allow to cool completely and enjoy!
